Six things to look for in coffee beans:
1. Type: Arabica or Robusta, or blended
2. Origin: Single or mixed
3. What’s the origin?
4. Freshly roasted, or not
5. Type of roast: dark, medium or light
6. The roaster: quality of equipment and expertise
There are five things to look for in the water being used for coffee. Three are physical attributes: water must be colourless, tasteless and odourless. Then comes the two important chemical attributes:
1. The ideal PH level should be 7.5 – 8
2. The idea TDS (total dissolved solids) should be 50-100 mg/L
The above can be achieved either by using your own RO plant, which we now put in all new outlets, or testing the commercially available drinking water to see which ones comes close.
Ideal milk for coffee has the right amount of fat, carbohydrates and protein. Cow milk works better than buffalo milk. Processed milk disturbs this composition so it’s not ideal, including UHT (ultra-heat treated) and non-pasteurized milk.
